Cappadocia, located in the Central Anatolia region of Turkey, is known for its unique geographical structure. This region has been influenced by various cultures throughout history, leading to the enrichment of Cappadocian cuisine. The local cuisine of Cappadocia offers distinctive flavors and dishes.

The fundamental ingredients of Cappadocian cuisine are natural products obtained from the fertile soils of the region. Vegetables, grains, legumes, and fruits form the basis of Cappadocian cuisine. Additionally, the region is famous for its vineyards and grape varieties, making it noteworthy for wine production.

One of the traditional dishes of Cappadocia is called “testi kebabı” or “pottery kebab.” Testi kebabı is prepared by placing meat and vegetables, cooked in a tandoor, into clay pots and then cooking them over a fire.

This method adds a special aroma and flavor to the dish. Other meat dishes in Cappadocia include tandoori kebab, lamb casserole with vermicelli, stuffed lamb, and clay pot kebab.

The rich variety of vegetables and legumes in the region allows for the preparation of various salads and appetizers. Mezes (appetizers) made with ingredients such as eggplant, zucchini, black-eyed peas, kidney beans, and chickpeas are popular in Cappadocian cuisine.

Particularly, eggplant salad, roasted eggplant salad, and the unique zucchini dessert of Cappadocia are beloved flavors of the local cuisine.

Keşkek soup is another important dish in Cappadocia. This soup is prepared by simmering wheat and chickpeas with meat for a long time. Moreover, “mantı” (dumplings) is an indispensable part of Cappadocian cuisine.

Cappadocia-style mantı is prepared by filling thin dough with a mixture of minced meat, onions, and spices. These dumplings are served with a sauce made of yogurt and butter.

The desserts of Cappadocia are also quite unique. In a region famous for its vineyards, products such as grape molasses, “pestil” (fruit leather), and “sucuk” (grape juice paste) made from grapes are common.

Additionally, pumpkin dessert, “şekerpare” (a type of cookie soaked in syrup), “şöbiyet” (a pastry filled with cream and nuts), and “özlem şerbeti” (a traditional sherbet) are among the sweets of Cappadocia.
